After gaining experience in the luxury hospitality sector, I took over the Place de la Baleine in the heart of Vieux-Lyon, first managing the restaurant Maître Boeuf in 2009. Then, succeeding the Monnet and Fournier families, I took the reins of the restaurant Aux Trois Maries in May 2012. Our guiding principle: work closely with local producers and offer traditional, flavorful cuisine in a refined setting, served by professional and attentive staff.
